  1. Lentil Loaf 2 C cooked lentils

  2. 1 C bread crumbs (rye is good) or use

  3. 1/2 c wheat germ and 1/2 c crumbs

  4. 1 small onion, finely chopped

  5. 2 Tbls soy sauce

  6. 2 Tbls nutritional yeast

  7. 1 tsp vinegar

  8. 1 tsp curry powder

  9. 1/2 tsp thyme

  10. 1/4 tsp dry mustard

  11. 1/2 c vegetable broth or water from cooking lentils

  12. pinch cayenne pepper

  13. Mix all ingredients and place in an oiled loaf pan or baking dish

  14. 350 degrees for 35 min, until

  15. top begins to brown. Serve with mushroom gravy, if desired.
