  2. 1/4 cup onion - minced

  3. 1/2 stalk celery - chopped

  4. 1/4 cup carrots - grated

  5. 1/2 cup flour

  6. 2 tablespoons cornstarch

  7. 2 cups chicken stock

  8. 2 cups chopped fresh cauliflower

  9. 4 cups milk

  10. 2 cups Velveeta cheese - cubed Melt the margarine in a stock pot. Saute the onions , celery and grated carrots in the margarine Blend in the flour and cornstarch Add the chicken stock and milk , and cook until thick. Add the cheese and cauliflower , cover and simmer for 1 hour. Top with fresh pepper and herbs
