  1. 2 Cauliflower - cut into florets

  2. 1/2 cup 31g / 1.1oz Onions

  3. 2 Fresh ginger root - peeled and chopped

  4. 1/2 cup 118ml Water

  5. 5 tablespoons 75ml Vegetable oil

  6. 6 Garlic - peeled and chopped

  7. 1 teaspoon 5ml Ground cumin

  8. 1 teaspoon 5ml Ground coriander

  9. 6 oz 170g Tomatoes - peeled and chopped

  10. 1/2 teaspoon 2 1/2ml Ground turmeric

  11. 1/2 teaspoon 2 1/2ml Cayenne pepper

  12. 1 Fresh green chili

  13. 1 tablespoon 15ml Lemon juice

  14. 1 3/4 teaspoons 8.8ml Salt

  15. 1/4 teaspoon 1 1/3ml Garam masala

  1. Brake cauliflower into florets. Blend 4 tablespoons water, onions and ginger into paste. Put oil into deep frying pan over medium heat. Put in garlic and stir till a medium brown. Put in cauliflower and stir-fry until they pick up a few brown spots. Remove cauliflower with slotted spoon and put into a bowl. Put onion-ginger mixture into pan. Sir-fry it for a minute. Add cumin, coriander and tomato.

  2. Sir-fry it until it turns a medium brown color. Add turmeric, cayenne, green chili, lemon juice and salt. Turn heat to low and add the cauliflower; stir. Add 3 tablespoons water, stir and bring to simmer for 5-10 minutes. Add garam masala, stir and serve.
