  1. 1 cup tortilla chips

  2. 3 Tbs melted butter

  3. 16 oz. cream cheese (2 bars)

  4. 2 eggs

  5. 2 cups shredded cheddar cheese

  6. 1/2 cup sour cream

  7. 1/2 cup hot pepper relish (I like Dat'l Do Hellish Relish if you can find it)

  8. 2 Tbs Parsley

  9. TOPPING:

  10. 1 cup chopped red pepper

  11. cup chopped tomato

  12. 1/4 cup chopped green onion

  13. 1/2 cup hot pepper relish (see note above on brand preference)

  1. Mix crushed tortilla chips and melted butter and spread evenly in the bottom of a 9" spring form pan. Bake at 325° 15 minutes. Beat together cream cheese and eggs on medium speed until well blended. Stir remaining ingredients into cream cheese mixture until well blended. Place mixture over cracker mixture and bake 25 minutes at 325° or until set. Remove from oven and spread 1 cup of sour cream over top and bake 5 more minutes. Remove from oven and run knife around edge of pan to loosen cake. Let stand until cool. Chill covered in the refrigerator until ready to serve. Serve at room temperature covered with topping ingredients.
