  4. 2 cup(s) chopped lean cooked corned beef

  5. 2 cup(s) chopped cooked all-purpose potatoes

  6. 1/4 teaspoon(s) coarsely ground pepper

  7. 1 tablespoon(s) chopped fresh parsley

  1. In 10-inch skillet, melt butter over medium heat. Add onion and cook, stirring often, until tender, about 5 minutes.

  2. Stir in corned beef, potatoes, and pepper until well combined. Cook, pressing hash down firmly withspatula, until bottom of hash has browned, about 15 minutes.

  3. With spatula, turn hash over one small section at a time. Press down with spatula and cook until second side has browned, 5 to 10 minutes longer. Sprinkle with parsley. Makes 4 main-dish servings.

  4. Red Flannel Hash: Prepare as directed, adding 1 cup finely chopped cooked beets with corned beef, potatoes, and pepper.
