  1. 2 Tbsp olive oil

  2. 4 roma tomatoes, diced

  3. 2 ears of corn

  4. 1 small red onion, diced

  5. 2 jalapeno peppers, diced

  6. 1 bunch of cilantro, diced

  7. 1/4 c lime juice

  8. 1/4 c olive oil

  9. 1/4 c vinegar

  10. 1 Tbsp Italian

  1. Heat 2 tbsp olive oil in a frying pan. Remove the corn from the cob. Add the tomatoes, corn, onion, peppers and cilantro to the pan. Cook until the corn is tender. Transfer to a bowl and add the lime juice, olive oil, vinegar and Italian seasoning. Mix well and serve hot or cold.
