  1. 1 tablespoon olive oil

  2. 1 onion, chopped

  3. 14 ounce can diced tomatoes, undrained

  4. 1/4 cup sliced green olives

  5. 4 (6 ounce) mild fish fillets

  6. 1/4 cup flour

  7. 1/2 teaspoon salt

  8. 1/8 teaspoon white pepper

  9. 2 tablespoons grated Parmesan cheese

  10. 3 tablespoons olive oil

  1. In medium skillet, heat 1 tablespoon olive oil; cook onion until tender, about 5 minutes. Add undrained tomatoes and bring to a boil; reduce heat and simmer for 5 minutes until blended. Add olives, cover, and remove from heat.

  2. On shallow plate, combine flour, salt, pepper, and cheese. Dip fillets into this mixture. In large skillet, heat 3 tablespoons olive oil over medium high heat; add fish and cook for 2-3 minutes on each side until light golden brown. Place cooked fish on serving plate and spoon olive sauce over. Serves 4
