  4. 1-12--16 ounces uncooked wide egg noodles

  5. 8 cups water

  6. 1 1/2 to 2 pounds boneless skinless chicken breasts (or other parts)

  7. 2 cups chopped onions

  8. 8 oz. of fresh sliced mushrooms

  9. 1 bell pepper (green or red), chopped

  10. 1 1/2 cup chopped celery

  11. 1 cup sliced carrots

  12. 1 teaspoon salt (or to taste)

  13. 1 teaspoon dried thyme leaves

  14. 1 bay leaf

  15. 1/2 teaspoon pepper

  16. 2 cans (10 ounce) cream of chicken soup

  17. 1 cup milk (may also use buttermilk )

  18. cook pasta according to package directions, omitting saltDrain;

  19. set aside.

  20. Meanwhile, bring water to a boil in Dutch oven over high heat. Add chicken breasts (or parts), onions , mushrooms , peppers , celery , carrots , salt , thyme , bay leaf and pepper.

  21. Return to a boil.

  22. 55 minutes. Remove chickenCut into 1/2-inch pieces; set aside.

  23. Increase heat to high. Return liquid in Dutch oven to a boil.

  24. Continue cooking until liquid and vegetables have reduced slightly. Remove from heat; discard bay leaf.

  25. Whisk in soup and milk until well-blended.

  26. Add chicken pieces and pasta; toss to blend.

  27. May simmer 5 more minutes if needed.

  28. Sprinkle with parsley , if desired.
