  2. PASTA CHEF'S CHOPPED SALAD

  6. 1 lb Ditalini or Orzo

  7. -OR other small pasta

  8. -shape, uncooked

  9. 4 oz Cooked turkey ham

  10. 1/4-inch cubes 1/2 c Swiss cheese

  11. 1/4-inch cubes 3 Celery stalks -- chopped

  12. 3 Scallions -- sliced

  13. 1/2 c Diced red onion

  14. 1/4 c Diced black olives

  15. Salt

  16. Freshly ground pepper

  17. 1/4 c Dijon mustard

  18. 2 tb Vegetable oil

  19. 1/4 c White wine vinegar

  20. Prepare pasta according to package directions; drain,

  21. rinse with cold water and drain again

  22. Place the pasta, turkey ham, cheese, celery,

  23. scallions, onion and olives in a mixing bowl. Season

  24. with salt and freshly ground pepper to taste.

  25. In a small bowl, mix the mustard, vegetable oil and vinegar until combined. Add to the pasta and toss.

  26. Refrigerate for two hours and serve chilled.
