  1. Cook and stir onion and garlic in spread in 10 inch non stick skillet over medium heat for 3 minutes or until tender; stir in spinach and tomatoes.

  2. Reduce heat to low. Pour egg beaters evenly over spinach mixture; cover.

  3. Cook 5 to 7 minutes until egg mixture is cooked on the bottom and almost set on top.

  4. Slide onto serving platter; garnish as desired. Serve warm.
