  1. 2 pounds cod fillet -- (6)

  2. 1/2 teaspoon salt

  3. 1/4 teaspoon ground red pepper

  4. 1 20 oz. can pineapple tidbits -- drained reserve

  5. 1/4 cup of juice

  6. 1 tablespoon butter -- melted

  7. 1/4 cup coconut -- toasted

  8. 2 tablespoons fresh parsley -- chopped

  1. Preparation : Heat oven to 350 degrees. Spray 13X9-inch baking dish with no stick cooking spray. Pat fillets dry with paper toweling; place in baking pan. Sprinkle with salt and pepper. Pour reserved juice and butter over fish. Bake for 20 to 25 minutes or until fish flakes with a fork. Top with pineapple tidbits, coconut, and parsley. To serve, spoon sauce over fish.
