  1. Dressing

  2. 6 tbsp. rice vinegar

  3. 1 packet seasoning mix from ramen noodles (see below)

  4. 1/3 cup sugar

  5. 1 tsp. salt

  6. 1 tsp. pepper

  7. 2/3 cup light canola oil or olive oil

  8. Salad

  9. 1 large head napa cabbage

  10. 3-4 cooked chicken breast halves

  11. 1 cup or 1 package frozen peas , thawed

  12. 1 (5 oz.) package slivered almonds

  13. sesame seeds

  14. 1/2 cup thinly sliced radishes

  15. 1/2 cup thinly sliced green onions

  16. 1/2 to 1 bunch of chopped cilantro

  17. couple of shaved carrots

  18. 2 packages Sapporo brand ramen noodles

  19. in International or specialty food section. If you can't find Sapporo

  20. brand, use any brand that says "original.")

  1. Boil or poach the chicken breasts and shred into bite-size pieces. Thinly slice cabbage.

  2. Add chicken, peas, radishes, carrots green onions and almonds. Toss.

  3. When ready to serve, break up both packages of uncooked noodles into small pieces and add to salad.

  4. No more than ½ hour before serving, add salad dressing and sesame seeds to taste.

  5. Dressing and chicken can be made one day ahead of time.

  6. Makes 6 large servings.
