  1. 1359 g whole pork butt

  2. 2 tbsp. vegetable oil

  3. 168 g dark beer

  4. 1 cup white wine vinegar

  5. 1 cup ketchup

  6. 1/2 cup worcestershire sauce

  7. 4 tbsp. molasses

  8. 1/4 cup brown sugar

  9. 1 tbsp. pepper

  10. 1 1/2 tsp. ground allspice

  11. 1 1/2 tsp. ground coriander

  12. 1 1/2 tsp. cayenne pepper

  13. 2 bay leaves

  14. 1 tsp. dry thyme

  15. 1/4 tsp. chili powder

  16. 1 tbsp. chopped onion

  17. 2 cloves garlic, minced

  18. 3 to 4 cups chicken broth

  1. Sear pork with oil in deep stewpot. Stir in beer, vinegar, ketchup, worcestershire, molasses, sugar, spices, onion and garlic. Add enough broth to cover pork. Bring to a boil. Simmer, covered, 14 to 16 hours, adding more broth if necessary to keep pork moist. Shred meat. Reduce liquid in pot by 1/2. Stir in meat.
