  1. 5- 1/2 (about 10 ounces) thick slices of bread, sour dough or french bread

  2. 2 1/2 ounces arugula

  3. 1/4 small red onion, thinly sliced

  4. 4 ounces goat cheese, crumbled

  5. 8 ounces cherry tomatoes, cut in half

  6. 1/2 cucumber, peeled, quartered and sliced Vinaigrette, recipe follows Vinaigrette:

  7. 1 cup diced sweet onion

  8. 1 Tablespoon minced garlic

  9. 1 cup olive oil

  10. 6 Tablespoons white balsamic vinegar

  11. 1/2 teaspoon pepper

  12. 1/2 teaspoon

  1. For the vinaigrette- 1. Chop onion and garlic in a small food processor until minced.

  2. In a medium bowl place minced onion and garlic, vinegar, salt and pepper.

  3. Slowly add in oil with an immersion blender or whisk by hand.

  4. Reserve for salad. For Salad: 1. Grill off the slices of bread. Cool and cut into bite sized cubes.

  5. In a large bowl mix: bread, arugula, onion, tomatoes and cucumber.

  6. Pour desired amount of dressing on the salad (I used about 1/3 of the dressing).

  7. Let sit for 30 minutes or more. Garnish with goat cheese and serve.
