  1. 8 c Water

  2. and dried mint

  3. and diced Minced garlic

  4. Cucumbers peeled seeded

  5. 1/2 c Plain yogurt per person

  6. Green onions to garnish

  7. Salt and pepper to taste

  8. 1/4 c Olive oil

  9. strips

  10. 1 md Onion cut into julienne

  11. 1 c Uncooked rice not instant

  12. 1 c Rinsed lentils

  13. Pita bread

  1. Add the water to the lentils and boil for 10 minutes.

  2. Add the rice and boil 15 minutes more, stirring continuously until rice starts to bubble at the top, then stir occasionally.

  3. Saute strips of onion in olive oil and add to rice and lentils.

  4. Salt and pepper to taste and simmer an additional 5 minutes.

  5. Garnish with green onions and serve with cucumbers mixed in yogurt and seasoned to taste, with garlic and mint.

  6. Accompany with pita bread.
