  1. Turkey Breast with Cider & Apples

  2. 3 shallots, thin sliced

  3. 6 small thin skinned potatoes, cut lengthwise in quarters

  4. 1 bay leaf

  5. 2 med size tart green apples, peeled, cored and cut in eighths

  6. 1 boneless, skinless turkey breast half (2-2-/12 lb), rolled and tied

  7. 1/4 tsp pepper

  8. 1/4 tsp ground nutmeg

  9. 1/8 tsp cinnamon

  10. 1/2 c. apple cider or apple juice

  11. 1 1/2 tbls cornstarch mixed with

  12. 2 tbls water

  13. salt to taste

  14. In crockpot, combine shallots, potatoes and bayleaf. Arrange apples

  15. over potatoes. Rinse turkey, pat dry and place on top of apples;

  16. sprinkle with pepper, nutmeg and cinnamon. Pour in cider. Cover

  17. and cook at low setting til meat in thickest part is very tender

  18. 8-10 hrs

  19. Carefully lift turkey to warm serving dish. Using a slotted spoon,

  20. lift out apples and potatoes and arrange around turkey. Keep warm.

  21. Blend cornstarch mixture into cooking liquid. Increase cooker

  22. setting to high; cover and cook, stirring 2-3 times, til sauce is

  23. 12-15 min

  24. To serve slice turkey about 1/4" thick. Spoon some of the sauce

  25. over turkey slices, apples and potatoes. Serve remaining sauce in

  26. bowl to add to taste.
