  1. 1 1/2 lb. lean ground beef

  2. 2 eggs

  3. 1 yellow onion, chopped

  4. 1/2 c. barbecue sauce

  5. 3/4 c. crushed whole wheat crackers

  6. 1 c. crushed baked potato chips

  7. 3/4 tsp. ground black pepper

  8. 1/2 tsp. salt

  9. 3/4 tsp. garlic powder

  10. 1 pinch cayenne pepper

  11. 6 slices lean bacon

  1. Preheat oven to 375 degrees.

  2. In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, ground black pepper, salt, garlic powder and cayenne pepper and mix well.

  3. On a lightly greased cookie sheet, shape the mixture into a loaf.

  4. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.

  5. Bake for 1 1/2 hours or until an juices run clear.<
