  1. 9 ounce(s) baby spinach

  2. 7 ounce(s) Feta crumbles

  3. 5 tablespoon(s) olive oil

  4. 2 tablespoon(s) sherry vinegar

  5. 1 red onion

  1. Slice red onion into 1/3'' slivers. Saute in 2 tbsp. oil until tender. Add to spinach in large bowl.

  2. Add 3 tbsp oil and feta to hot pan, cook for 1 min.

  3. Stir in sherry vinegar, add salt and pepper to taste. Pour over spinach and onions. Toss to coat. Serve immediately.
