  1. 680g (1 1/2 lb) ricotta cheese

  2. 3 slices prosciutto, diced

  3. 3 tablespoons grated Pecorino cheese

  4. 3 tablespoons grated Parmesan cheese

  5. 2 eggs

  6. 2 tablespoons chopped fresh parsley

  7. 1 clove garlic, minced salt and freshly ground black pepper to taste

  1. In a large bowl mix together the ricotta , prosciutto, Pecorino, Parmesan, eggs, parsley, garlic, salt and pepper. Use the mixture to fill calzones.
