  1. 300g piece blue eye

  2. Sea salt

  3. 1 bay leaf

  4. tsp pepper corns

  5. Generous sprig thyme

  6. 1 shallot , roughly chopped

  7. 2 cloves garlic , peeled and sliced

  8. 1 1/2 cups milk

  9. 150g potatoes

  10. 3 tbsp approx. extra virgin olive oil

  1. Start Recipe One Day Ahead Place fish on a plate and sprinkle both sides generously with sea salt.

  2. Place fish in a colander standing over the plate and refrigerate for 24 hours.
