  1. 1 lb 454g / 16oz Red kidney beans

  2. 1 Meaty ham bone

  3. 2 Onions - chopped (large)

  4. 1 Bell pepper - chopped

  5. 2 Celery - chopped

  6. 2 Garlic - finely chopped

  7. Salt and pepper to taste

  8. 1 Sugar

  9. 1 Bay leaf - ( optional )

  10. 2 lbs 908g / 32oz Spicy sausage links

  11. 1/4 cup 36g / 1 1/3oz Parsley - chopped

  12. Cooked rice

  1. Soak beans overnight, rinse. Cover with water and cook with ham bone ( fat trimmed off ), onion, bell pepper, celery, salt, pepper, sugar, and bay leaf. While beans are cooking, boil sausage in skillet.

  2. Drain, fry until crisp, and set aside. Cook beans until fork tender ( 1 - 2 Hrs ); then add fried sausage.

  3. JUST before serving, remove bay leaf and add parsley. Serves 8 ( small servings ) and freezes well.

  4. Serve with corn bread and mustard greens to complete the mood.
