  1. 200g (7oz) Savoy cabbage, finely shredded

  2. 100g (3 1/2oz) carrots, peeled and cut into thin matchsticks

  3. 2 spring onions, finely shredded

  4. 2tbsp fresh orange juice

  5. 2tbsp low-fat Greek yoghurt

  6. 3tbsp low-fat mayonnaise

  7. 1tbsp finely chopped coriander or flat-leafed parsley

  8. 50g (2oz) dry roasted salted peanuts, roughly chopped

  1. Put the cabbage, carrots, onions, orange juice, yogurt, mayonnaise and half the chopped herbs together in a large bowl. Mix together thoroughly using your hands or two forks. Season with pepper and a little salt.

  2. Transfer the mixture to a salad bowl and top with the remaining chopped herbs and peanuts just before serving.
