  1. 3/4 cup instant rice -- uncooked

  2. 1/4 cup chopped green bell pepper

  3. 1 tablespoon chopped fresh oregano

  4. 1/4 teaspoon salt

  5. 1/8 teaspoon ground red pepper

  6. 1 medium onion -- chopped

  7. 1 clove garlic -- finely chopped

  8. 1 can stewed tomatoes -- undrained

  9. 1 can black-eyed peas -- rinsed and drained

  1. Preparation : Heat all ingredients to boiling in 10-inch skillet, breaking up tomatoes and stirring frequently; reduce heat. Cover and simmer about 10 minutes or until liquid is almost absorbed.
