  1. 1/4 c. flour

  2. 1 c. white sugar

  3. 1/4 tsp. salt

  4. 2 tbsp. butter

  5. 2 egg yolks

  6. Rind & juice of 2 lemons

  7. 2 egg whites, beaten stiff

  8. Unbaked pie shell

  9. 1 c. milk

  1. Cream butter, sugar, salt and flour in mixing bowl. Add egg yolks; beat well. Stir in grated lemon rind, juice and milk. Fold beaten egg whites into first mixture. Pour into pie shell. Bake 30-40 minutes at 300 degrees. Top should be golden brown.
