  1. 1 roll (7 oz) almond paste

  2. 1/2 cup sugar

  3. 1/2 cup (8 Tblsp) butter at room temp.

  4. 3 eggs at room temp

  5. 1/2 cup cake flour

  6. 350 F with rack in the middle. Grease and flour a small cake pan (or tart pan with removable bottom--looks pretty when finished). Cut almond paste into small pieces. With electric mixer on low speed, blend almond paste, sugar and butter. Continue mixing, adding eggs one at a time. Mix on high until batter is light and fluffy, about 3 min. Sift the cake flour and gently fold into batter until just blended. Spread batter evenly into pan. Bake

  7. 30-35 minutes or until golden and inserted toothpick comes out clean. Delicious plain, or frost as desired.

  8. The picture shows the cake done in a tart pan with a chocolate frosting just on the top and a fruit garnish in the center.
