  1. 18 Pacific oysters, shucked

  2. 18 coriander leaves

  3. cup deep-fried shallots

  4. 150ml light soy sauce

  5. 100ml white vinegar

  6. 100ml water

  7. 100ml mirin

  8. Heaped 2/3 cup (100g) white sugar

  9. 6cm piece ginger, thinly sliced

  10. 6 red bird's eye chillies, deseeded, sliced

  11. 4 cloves garlic, finely sliced

  1. To make dressing, place soy, vinegar, water and mirin in a saucepan, bring to a boil, add sugar and stir to dissolve. Add ginger, chilli and garlic, bring back to boil. Remove from heat and set aside to cool.

  2. Arrange oysters on a platter over crushed ice. Spoon dressing over and garnish with coriander and shallots.
