  1. 1 cup cornmeal

  2. 1 cup flour

  3. 1 cup diced apple

  4. 1/2 cup brown sugar

  5. 4 teaspoons baking powder

  6. 1 1/4 cups milk alternative --see note mixed with

  7. 1 tsp. apple cider vinegar

  8. 2 tablespoons oil

  9. 1/2 cup orange marmalade -- (or other jam)

  1. Preparation : * i.e. Plain Rice Milk, Lite Soy Milk, Almond Milk, etc. Mix all ingredients in order listed. Put one half of the batter in a greased 8 or 9 inch square baking pan. Evenly top batter with 1/2 cup jam and top with remaining batter. Bake at 400 F for 25 minutes. Do not overbake. Allow to cool slightly before cutting
