  6. 3/4 c Aunt Jemima (Orig) pancake m

  7. 3/4 c Skim milk

  8. 2 tb Vegetable oil*

  9. 1 ea Jar chunky apple sauce

  10. 1 ea Large egg

  11. 8 ea Large ripe strawberries

  12. 1 x Powdered sugar

  13. 1 x Cinnamon

  14. Mix the pancake mix, milk, egg and oil in a 2 cup

  15. measure. OK to have a little rough mixture. Make the

  16. mixture a little thinner than regular batter but

  17. thicker than for a crepe.

  18. Heat an 8 shallow Teflon (sloped sided) pan with a

  19. drop of oil on medium heat. Pour in 1/4 of the batter

  20. (enough to make a thin pancake. Allow the dough to

  21. cook until the bubbles form on top but the pk is not

  22. cooked all the way through. The bottom should be a

  23. light golden brown. Scoop 3 Tbs of apple sauce on one

  24. half of the pancake. Quickly fold the other half over

  25. so it puffs up. Cook for about a minute or so (being

  26. careful not to burn). Turn over briefly to cook other

  27. side and warm the apples.

  28. Serve each on a large platter and top with cinnamon

  29. and sliced strawberries Finish with a little powdered

  30. sugar.

  31. I think what happened was that the applesauce mixed

  32. with the still uncooked pancake top and was cooked

  33. (combined) to make an unusual fluffy inside.
