  1. 1 cup quick-cooking oats

  2. 1 cup low fat milk -- hot

  3. 3/4 cup cooked or canned pumpkin

  4. 2 eggs -- beaten

  5. 1/4 cup margarine -- melted

  6. 2 cups flour

  7. 1 cup sugar

  8. 1 tablespoon baking powder

  9. 1/4 teaspoon salt

  10. 1 teaspoon ground cinnamon

  11. 1/4 teaspoon ground nutmeg

  12. 1 cup raisins

  13. 1/2 cup chopped pecans

  14. OVEN: 350

  15. In a large bowl, combine oats and milk; allow to stand about 5 minutes. Stir in pumpkin, eggs and margarine.

  16. In a separate bowl, mix together flour, sugar, baking powder, salt and spices. Gradually add dry ingredients to oatmeal mixture; stir in raisins and nuts and mix well.

  17. 9 x 5- inch loaf pan. Bake

  18. 55 to 60 minutes or til done. Cool on wire rack.
