  1. 1lb beef shanks

  2. 1 cup barley

  3. 3 cups beef stock

  4. 1 tbsp tomato paste

  5. 1lb carrots

  6. 1 medium onion

  7. 1 14 1/2oz can diced tomatoes

  8. 1lb red potatoes

  9. 1 cup green beans

  10. 1 cup corn

  11. salt and pepper to taste

  12. 1/2 tsp oregano

  13. 1/2 tsp basil

  14. note: you could really add anything here you wanted, lima beans or the like.

  1. Season the beef shank and brown on each side. Set aside.

  2. Sautée onions until soft.

  3. minutes or so.

  4. Add stock and 4-5 cups water, along with carrots and the tomatoes. Add spices. Bring to a boil and lower to simmer. I would leave it simmering for at least 2-3 hours.

  5. Prepare barley; add potatoes, green beans and corn.

  6. Pull apart beef shank into nice bite-sized pieces.

  7. Check to make sure potatoes are done. This should take in the neighborhood of 30-45 minutes.

  8. When barley is finished, drain and add to soup.

  9. Enjoy!
