  1. 1-15 oz. can black eye pea s

  2. 1-15 oz. can whole kernel corn (drained)

  3. 2 med. tomato es, diced and seeded

  4. 1 yellow bell pepper , diced

  5. 1 red bell pepper , diced

  6. 1 orange bell pepper , doced

  7. 1 green pepper , diced

  8. 1 red onion , diced

  9. Place in large bowl, toss and set aside.

  10. 1/3 C. lime juice

  11. 1/3 C. olive oil

  12. 1/3 C. finely chopped cilantro or parsley

  13. 1 tsp. salt

  14. 1/2 tsp. cumin

  15. 1/2 tsp. ground red pepper

  16. 1 T. garlic powder

  17. 3 cloves garlic finely diced

  18. 1 T chili powder

  1. Mix together lime juice et al in the second column pour over vegetables.

  2. Pour into a gallon jar and let sit in the refridgerator until serving (better if it sits overnight).

  3. Turn the jar over to mix it up.

  4. Serve with your favoite tortilla chips. Scoops work great.
