  1. 200g caster sugar

  2. 5 whole eggs

  3. 200g plain flour

  4. 100g clarified butter

  5. 2 shots of expresso (or 1 heaped teaspoon of nescafe diluted with a little water)

  6. 100ml of water

  7. 2 shots of whisky

  8. 50g of caster sugar

  9. 450g of dark chocolate

  10. 1 shot of whisky

  11. 1 shot of espresso

  12. 600ml of double cream

  13. Whipped cream

  14. Seasonal berries to decorate (frozen berries are fine)

  1. To make the sponge Whisk the sugar and the eggs together. Fold in the flour then the butter. Spread the mixture over a baking tray covered with parchment paper which has been buttered and dusted with flour. Bake at 160c for about 8 to 10 minutes until the sponge is cooked. It must not be dry. It should be kept fluffy.

  2. Once cooked leave to cool. When cooled cut the sponge to the shape of your cake dish. You will need a round base and strips of sponge to go around the inside of the cake dish. Put the sponge pieces into the cake dish.
