  8. -- For the dressing --

  9. 1 lime -- grated rind & juice

  10. 3 tbsp groundnut oil

  11. 2 tbsp light soy sauce

  12. 1 garlic clove -- crushed

  13. 1 red chilli -- deseeded fine choppd

  14. 2 1/2 cm piece fresh root ginger -- grated

  15. 3 tbsp chopped fresh coriander

  16. -- For the Salad --

  17. 450 g mixed mushrooms eg button oyster shiitake -- sliced

  18. 350 g mooli radish (daikon) -- peeled and grated

  19. 4 spring onions -- sliced into strips

  20. seasoning

  21. crisp lettuce leaves -- to serve

  22. 1. Mix together all the dressing ingredients in a large bowl. Add the

  23. mushrooms, mooli and spring onions and mix well.

  24. 2. Cover and leave to marinate for at least 2 hours in the fridge. Season

  25. to taste. Serve spooned over crisp lettuce leaves.
