  1. 4 Dried New Mexico red chilies

  2. 4 Dried chipotles

  3. 2 Fresh habanero - stemmed, seeded

  4. 6 Garlic cloves (medium)

  5. 1/3 cup 78ml Fresh rosemary - loosely packed

  6. 1 1/2 teaspoons 7 1/2ml Sea salt

  7. 1/4 cup 59ml Straight bourbon

  8. 2 cups 474ml Red wine vinegar

  9. 1/4 cup 59ml Fresh lemon juice

  10. 1/4 cup 15g / 1/2oz Onion - chopped

  1. Recipe Instructions Preheat oven 250F. Dry roast the dried chilies until you smell them, about 3 minutes. Submerge them in a pot of hot water and soak them until soft, about 20 minutes. Put all ingredients in blender and give it hell for 3-4 minutes. Pour into mason jar. Joe's soak sauce improves with age and will last several weeks. I have also frozen it. Serving Ideas : great for chicken or pork ribs.
