  1. 1 pound salt salmon, shredded

  2. 4 pounds ripe tomatoes, small dice

  3. 3/4 pound Maui onion, finely diced

  4. 5 ounces scallions, whites and greens, coarsely chopped

  1. Mix all ingredients together by hand ('lomi lomi' means "to massage" in Hawaiian). Let cool in refrigerator.
