  1. 1/4 c. quick-cooking tapioca

  2. 1 tbsp. lemon juice

  3. 1 tbsp. peach-flavored brandy or water

  4. 2 lb. fresh peaches, peeled and sliced (about 3 c.)

  5. 3/4 c. sugar

  6. 1/4 c. flour

  7. 1/4 c. packed brown sugar

  8. 1/4 c. chopped almonds

  9. 3 tbsp. butter, melted

  10. 1 (9-inch) pie crust, baked

  1. Combine tapioca, lemon juice and brandy in a 2-quart glass measure or casserole. Let stand while preparing peaches. Add peaches and sugar. Microwave on high 4 minutes; stir. Microwave on high 3 to 4 minutes, or until liquid bubbles around the edges; set aside.

  2. Combine flour, brown sugar, almonds and butter. Crumble half of mixture into baked pie crust. Pour peach filling into crust and sprinkle with remaining crumb mixture. if desired, decorate with baked pastry shapes. Let stand 2 hours before serving; serve warm. Makes 8 servings.
