  1. 2 lbs 908g / 32oz Pork roast - cut into 1" pieces

  2. 2 lbs 908g / 32oz Cheap ground beef - (you'll need the Fat this isn't health food.)

  3. 1/2 cup 118ml Good chile powder

  4. 1 Onion - roughly chopped

  5. 1 Garlic clove - minced

  6. 8 New Mexican green chiles - roasted, peeled, seeded, chopped.

  7. 1 tablespoon 15ml Hot Hungarian paprika - (this is legal. Paprika is a chile.)

  8. 1 tablespoon 15ml Ground cumin

  9. 4 Beef bouillon cubes

  10. 1 can Crushed tomatoes

  11. 1 can Amber Mexican beer - (Dos Equiis)

  12. 1/4 cup 59ml Bourbon

  13. 1 packet Bitter baker's chocolate

  14. Salt to taste

  1. Saute 1/4 of the garlic and onions until translucent. Add 1/4 of the meat, chile powder and brown. Salt the meat while cooking. Put into your chili pot. Cast iron is best. Repeat until all the meat is done. Put the rest of the ingredients in you chili pot and simmer for a hour.

  2. As in any recipe, the amount of ingredients is variable. Add more of anything you want, especially chiles.
