  1. 500 g minced lamb

  2. 3 tbsp chopped mint

  3. 2 tbsp chopped rosemary

  4. 1 small egg , yolk only

  5. 1 clove garlic , finely chopped

  6. 200 g Greek yogurt

  7. 1 tbsp olive oil

  8. rocket or watercress

  9. 4 bread rolls , halved and toasted

  1. Combine the lamb mince, 2 tablespoons of the mint, rosemary, the egg yolk together in a bowl, then season with salt and pepper. Mix well and form into patties.

  2. Brush each burger with a little olive oil and cook in a heated oiled griddle pan on each side for 3-4 minutes on each side until cooked through but slightly pink in the middle.

  3. Meanwhile make a dressing for the burgers by combining the yogurt, garlic and olive oil. Add the rest of the chopped mint and mix well, then season to taste with salt and pepper.

  4. Place the lamb patties on the bun half and drizzle over the dressing. Scatter a handful of watercress or rocket and place the other half on top.
