  4. 2 fresh jalapeno chilies, stemmed, seeded and finely chopped

  5. 3 tbsp. kosher salt

  6. 504 g each 1 1/2 tbsp. vegetable oil

  1. Preheat oven to 400 degrees. Combine the cloves and cumin seeds in a small skillet over medium heat and toast until the cumin seeds are slightly browned, tossing frequently. Place the cloves and cumin in a spice grinder and grind coarsely. Transfer the spice mixture to a small bowl and stir in the curry powder, jalapenos and kosher salt. Rub the spice mixture all over the pork chops. Heat the oil in a large cast iron skillet over medium high heat. Add the spiced pork chops to the skillet and cook 1 to 2 minutes per side until golden brown and slightly crusty. Place the skillet in the oven and bake about 8 to 10 minutes until the chops are cooked through but still moist. Serve the pork chops immediately.
