  1. 354.88 ml flour (I use the kind labeled "Better For Bread")

  2. 4.92 ml baking powder

  3. 2.46 ml baking soda

  4. 1 1/53 ml salt

  5. 9.85 ml ground cinnamon

  6. 2 eggs

  7. 177.44 ml sugar

  8. 118 1/59 ml vegetable oil

  9. 9.85 ml vanilla

  10. 354.88 ml shredded yellow squash (I shred it in the Food Processor)

  1. Combine the Flour, Baking Powder, Baking Soda, Salt and Cinnamon in a Medium bowl.

  2. Combine the Eggs, Sugar, Oil and Vanilla in a separate LARGE bowl.

  3. Beat well. ( I use a hand mixer).

  4. Stir in the Shredded Yellow Summer Squash.

  5. Add the dry ingredients to the Squash mixture.

  6. Stir until moistened.

  7. Pour or spoon into a greased and floured loaf pan.

  8. Bake at 350 degrees F for 50 minutes or until a knife inserted in the center comes out clean.

  9. Cool for about 10 to 15 minutes and remove from pan.
