  1. 1 Mori-Nu silken style tofu - (12 1/3 oz) - firm

  2. 3 tablespoons 45ml Olive oil

  3. 2 tablespoons 30ml Cider vinegar

  4. 1 tablespoon 15ml Unbleached cane sugar

  5. 1 tablespoon 15ml Dijon mustard or Creole mustard

  6. 1 teaspoon 5ml Salt

  7. 1 teaspoon 5ml Creole Seasoning - (see recipe)

  8. 1 tablespoon 15ml Freshly-chopped parsley

  9. 1 tablespoon 15ml Relish

  10. 1 tablespoon 15ml Capers - drained

  1. Recipe Instructions In a food processor or blender, place the tofu, olive oil, vinegar, mustard, salt, and Creole Seasoning, and process until smooth. Add the remaining ingredients and pulse a few times to combine. Transfer to an airtight container and store in the refrigerator. Use as a spread on sandwiches or wraps, or as a sauce on steamed vegetables or grains. This recipe yields 1 1/2 cups.
