  1. Handful fresh mint leaves

  2. 60ml simple syrup, recipe follows

  3. 240ml light rum

  4. 120ml fresh lime juice

  5. 120ml fresh blood orange juice

  6. 240ml sparkling water

  7. 1L crushed ice

  8. Blood orange segments and fresh mint sprigs, for garnish

  9. 110g sugar

  10. 120ml water

  1. Electric blood orange limeade with muddled mint Using a mortar and pestle, muddle the mint until the oils are released (you will smell the mint).

  2. Pour the simple syrup into a large jug. Add rum, lime juice and blood orange juice and stir vigorously. Add the crushed mint and the sparkling water.

  3. Divide the ice among 4 glasses or cups. Pour the limeade mixture into each glass and garnish with blood oranges and fresh mint sprigs.

  5. Add the sugar and water to a small saucepan and heat until the sugar dissolves. Allow to cool before using.
