  1. Combine ingredients A and blend until very fine. Heat oil and stir fry blended ingredients mixture until aromatic. Add chicken pieces and fry for 2 minutes.

  2. Stir in thin coconut milk and chicken stock cubes. Simmer for 3 minutes.

  3. Add thick coconut milk and simmer for 4 minutes. Stir continuously.

  4. Add tomatoes and remove from heat.
