  1. 1 lb minced chicken

  2. 1 small knob of root ginger , chopped

  3. 1 red onion , chopped

  4. 1 clove garlic , chopped

  5. Vegetable oil for frying

  6. 1 bunch of chopped spring onions

  7. Pinch of 5 spice powder

  8. 1 egg to bind

  9. flour for dusting

  10. Handful of soya beans

  11. 1 bag of alfalfa shoots

  12. 1 tbsp soy sauce

  13. 1 tbsp sherry vinegar

  14. 1 tbsp runny honey

  15. 3 tbsp olive oil

  16. 2 spring onions finely shredded

  17. 1 plum tomato diced

  18. 2 slices of griddled bread

  19. mango chutney

  1. Sweat off the onions, garlic and ginger. In a bowl mix together the chicken mince, spring onions, five spice, the sweated onions, garlic and ginger.

  2. Bind the mixture with an egg and shape into patties. Lightly dust the patties with flour and fry off in a little vegetable oil until golden. Mix all the ingredients for the vinaigrette and set aside. Cut the white bread into rounds and griddle on each side. Build up your burger to your tastes adding a dollop of mango chutney.
