  2. 1 lb. unsalted butter

  3. 1 lb. bittersweet chocolate

  4. 8 eggs (whole)

  5. 8 egg whites

  6. 3 cups powdered sugar

  7. 1 cup all purpose flour

  8. 1/2 teaspoon kosher salt

  9. as needed cocoa powder

  10. as needed unsalted, softened butter

  1. melt chocolate and butter into a double boiler. Set aside and keep warm.

  2. using a table top mixer, mix eggs, sugar and salt on medium speed until light in color and very thick (soft peaks)

  3. 3) slowly mix in chocolate and butter mixture into egg mixture and blend4) sprinkle flour evenly over batter and fold 5) before pouring into baking cups or muffin tins, rub inside with softened butter and sprinkle cocoa powder inside6) place approximately 5 oz. of batter into baking cups or muffin tins7) bake for 10 minutes at 425 degrees, cakes should have a soft and liquid center
