  1. Sassy Spice Cake

  2. 2 cups all-purpose flour

  3. 4 teaspoons baking powder

  4. 1 teaspoon baking soda

  5. 1 cup sugar

  6. 3/4 teaspoon ground cinnamon

  7. 1/2 teaspoon ground cloves

  8. 1/2 teaspoon ground allspice

  9. 1 1/2 cup pepper and tomato salsa (see below)

  10. 1/2 cup shortening (or butter)

  11. 2 eggs

  12. 1/2 cup water

  13. Cream Cheese frosting (see below)

  14. Add all dry ingredients into a good sized mixing bowl. Mix well.

  15. Add salsa and shortening. Beat until well blended and smooth. Grease

  16. and flour two 8-inch round cake pans, lined with baking or parchment

  17. paper. Pour in the batter, spread evenly and pat pan of batter on

  18. 350F. for about minutes, or until a wooden toothpick comes out of the center clean.

  19. Cool and frost with cream cheese frosting. Makes about 12 servings.

  20. Pepper and Tomato Salsa

  21. 15 ounce can of crushed tomatoes

  22. 1 cup chopped and roasted red bell pepper

  23. 2 cloves peeled and minced garlic

  24. 2 tablespoons chopped cilantro or parsley

  25. 2 teaspoons minced jalapeno chili peppers

  26. 1 tablespoon olive oil

  27. 2 teaspoons cider vinegar

  28. 1/4 teaspoon salt

  29. In a skillet cook the garlic, cilantro and chili peppers in olive

  30. oil until the garlic is soft. Combine together the tomatoes and chopped red peppers, mix well in a mixing bowl and set aside. Stir

  31. garlic mixture and tomato mixture together and add vinegar and salt. Makes about 2 cups.

  32. Cream Cheese Frosting

  33. 6 ounces soft cream cheese

  34. 4 cups confectioners sugar

  35. 2 tablespoons soft butter

  36. 1/2 teaspoon pure vanilla extract

  37. Mix well in bowl. Spread over very cool cake.
