  1. Mixed Garden Casserole

  2. 1/4 cup brown sugar, firmly packed

  3. 2 tsp salt

  4. 1/2 tsp pepper

  5. 1/2 cup uncooked, long grain rice (not instant)

  6. 1 small eggplant, peeled and sliced

  7. 1 large onion, sliced

  8. 3 medium zucchini, sliced

  9. 2 med-size yellow summer squash, sliced

  10. 1 large green pepper, seeded and sliced

  11. 2 large tomatoes, peeled and sliced

  12. 2 Tbsp butter or margarine

  13. Combine brown sugar, salt and pepper; set aside. Place rice in

  14. bottom of a lightly sprayed or nonstick 13x9x2-inch baking dish.

  15. Layer eggplant, onion, yellow squash, zucchini, green pepper and tomato in baking dish. Sprinkle brown sugar mixture over each layer.

  16. Dot with butter or margarine. Cover tightly and bake at 350F degrees

  17. for 1-1/2 hours, or until rice and vegetables are tender. Makes

  18. 10 servings.
