  1. 1 pound Italian sausage casing removed, cut in bite-size pieces

  2. 1 onion , chopped

  3. 3 zucchini , cut in 1-inch slices or yellow summer squash

  4. 1 eggplant , coarsely chopped

  5. 1 Green Bell Pepper , coarsely chopped

  6. 1/4 cup water

  7. 2 cups prepared marinara sauce

  8. 3 cups chunks Pineapple

  9. 4 cups hot cooked noodle s

  1. Cook sausage and onion in large skillet or Dutch oven until sausage is browned. Add zucchini, eggplant, bell pepper and water. Cover, reduce heat to low, cook 10 minutes or until vegetables are tender.

  2. Stir marinara sauce and pineapple into skillet. Cook 5 minutes or until heated through. Serve over hot cooked noodles.
