  1. Christmas Cake (Jclakaka)

  2. 1 cup margarine (200 gr.)

  3. 8 Tbsp. sugar (200 gr.)

  4. 2-3 eggs

  5. 4 cups flour (450 gr.)

  6. 2 tsp. baking powder

  7. 1 tsp. cardamom powder

  8. 2 dl. milk

  9. 3 Tbsp. raisins

  10. Cream the fat and sugar until light and foamy. Add the eggs, one

  11. at a time and proceed with the creaming. Mix the flour, cardamom

  12. and baking powder and fold into the mixture together with the milk.

  13. Add the raisins. Pour the batter into a greased tin. Cover lightly

  14. with waxed paper, bake at 175 C (300 F) for one hour. Remove paper,

  15. continue baking for another 30 minutes until done.
