  1. CHEWY COCONUT MACAROONS

  2. 1/3 cup sifted flour

  3. 1/4 teaspoon baking powder

  4. 1/8 teaspoon salt

  5. 2 eggs

  6. 1 teaspoon vanilla

  7. 3/4 cup sugar

  8. 1 tablespoon butter, melted

  9. 2 2/3 cups flaked coconut

  10. Sift together flour, baking powder and salt; set aside.

  11. Beat together eggs and vanilla in bowl until foamy, using electric

  12. mixer at high speed. Gradually beat in sugar. Continue beating

  13. at high speed until thick and lemon-colored. Blend in butter.

  14. Gradually add dry ingredients to egg mixture, using electric mixer

  15. at low speed. Fold in coconut. Drop mixture by rounded teaspoonfuls,

  16. about 2 inches apart, on greased baking sheets.

  17. 325 degree oven

  18. 15 minutes, or until golden brown around

  19. the edges. Remove from baking sheets, cool on racks. Makes 2 1/2

  20. dozen.
